Tasty Tuesday: Pad Thai

So my pregnant self was really in the mood for Thai food the other day, so I ventured to make pad thai, coconut curry soup, and sweet rice and mango.  It was all so delicious and definitely hit the spot. I'm just posting the pad thai recipe today, so look forward to the other recipes in the future!  Just a heads up the ingredients list may look a little overwhelming but a lot of the items are good to have on hand, like siracha and fish sauce and it will last you awhile! Plus the recipe is really easy and fairly quick, 30 min from start to finish!

Ingredients
16 oz Rice Noodles
1/4 cup vegetable oil
1 Tbs chopped garlic
1/2 cup chopped onion
1 Chicken breast, pounded to 1 in thickness and cut into bite size pieces
4 eggs beaten
2 carrots cut into thin strips
3 cup bean sprouts
6 green onions
2 Tbs peanuts
1/4 cup cilantro
1 lime
Sauce:
3 Tbs fish sauce
3 Tbs soy sauce
2 1/2 Tbs Siracha
3/4 cup fresh lime juice
3 Tbs brown or white sugar, or a mixture of both
1/4 cup chicken stock


First step is to place the rice noodles in a bowl of hot water.  You'll want to make sure the bowl is large enough  that you can move the noodles around every once in a while so they won't get stuck together (I made this mistake the first time I made pad thai). Cover the bowl and let sit for 20 min.


Next combine all the sauce ingredients in a small bowl and set aside.


Heat the oil over medium heat then add onions, saute for about 3 minutes.  Add garlic and saute for about 10 seconds.


Move the onion and garlic to the outsides of the pan and throw the chicken in the middle, salt and pepper generously.  At this point you will want to make sure the burner isn't to high that is is burning the garlic!


Once the chicken is browned on both sides push it to the outside with the onions and garlic.  Make sure the pan is still oiled well before throwing the eggs in the middle, I had to spray it with a little Pam.


Once the eggs are scrambled the rest is easy! Throw the noodles, carrots and sauce into the pan, mix well and let cook for about 5 min. Add the remaining ingredients and its ready to serve with a lime on the side!


For some reason my picture taking skills get worse towards the end of my cooking process.  You'll just have to trust me that the finished product tastes better than this picture looks!!
